Ajwain or Ajowan (royal cumin) is not actually a seed but the dried fruit of an annual herb. The taste is slightly bitter and spicy. The strong aroma is reminiscent of thyme and oregano, but with a peppery undertone. If you cook it, the taste will be softened a bit.

Due to the high oil content in the seeds, ground ajowan loses some flavor more quickly. That is why it is best to use the whole seeds or grind them just before use. Ajwain/Ajowan works well in combination with cardamom, cinnamon, cumin, fennel, cloves, garlic, pepper and turmeric. Do not use too much to avoid a bitter taste.
