Nilaa's traditional oil extraction process
The best sesame seeds come directly from the micro farmers in India. These are sun-dried and the 100% natural oil is extracted by a stone mill with a wooden pestle that rotates only 7 times per minute, just like the traditional ox mill. This avoids heating and preserves the nutrition and real flavors.
This sesame oil is traditionally supplemented with jaggery, which increases the taste and also the nutritional value.
This oil is left in sunlight for 5 days to allow the sediments to settle. The oil preserves the natural goodness of sesame because it is extracted naturally without the addition of chemical additives or solvents.

Application
It is important to note that cold-pressed sesame oil has a lower smoke point than refined sesame oil, so it is best to use it for sauces, dressings and light baking recipes. For baking at high temperatures it is better to use refined sesame oil. Cold-pressed sesame oil has a strong flavor, so use it sparingly so as not to overpower the flavor of your dishes.
