Preparation
Pathiri:
- Bring 1.5 to 2 cups of water to a boil.
- Add 1 cup Pathiri Podi and salt if required.
- Mix and knead well while still hot to make a smooth dough (use boiled water while kneading if necessary).
- Make small balls from this dough.
- Sprinkle some rice powder on it and roll it into thin Pathiris.
- Fry this in a hot tawa without using oil.
Idiyappam:
- Mix Idiyappam Podi with salt.
- Sprinkle enough water and mix well until it resembles breadcrumbs.
- For best results, let the mixture rest for 5 minutes.
- Add 1 teaspoon of grated coconut into the mold and press the dough into the mold using an idiyappam press.
- Fill the idli maker 3/4 full with water and bring it to the boil.
- Place the mold in the idli maker.
- Cover and steam for 15-20 minutes or until done.
- Serve with hot curry.
