Jaggery is a tasty unrefined sugar made from jaggery. It is less sweet than maple syrup and a little thicker than honey. Its color varies from golden yellow to dark brown and it has a rich flavor similar to brown sugar.

Jaggery has some health benefits compared to, for example, beet sugar: it is absorbed into the blood less quickly and therefore has less drastic influence on the blood sugar level. Jaggery also contains useful nutrients such as minerals (magnesium and potassium) and vitamins.

Use

Jaggery is sold in disc shape, inverted pudding bowl shape, inverted coffee cup or bucket shape, or simply in handy chunks. You can break off small pieces and use them in curries, lentil soup, chutneys, desserts, pastries, etc. or you can grate some with a (microplane) grater. You can use it in recipes that replace brown sugar or cane sugar, but you can also simply replace it with brown sugar, cane sugar, palm sugar or even granulated sugar. It is mainly the color of your dish that will be different. Jaggery can be kept airtight for months, if not years, at room temperature.
