Keep in a cool and dry place. After opening, transfer the contents to an airtight container.
Step 1: Take the entire content of the Vada Mix and add an equal amount of water. Mix this into a soft batter and let it rest for about 8 to 10 minutes.
Step 2: Add 1 finely chopped onion, 2 green chillies, a small piece of ginger and some curry leaves to the batter. Flatten a small amount of batter in your palm and make a hole in the center. Fry the vada until they are golden brown.
Step 3: Serve the warm vada with sambar and coconut chutney.
